This dinner was yummy so I thought I'd share! I got the 2 recipes of pinterest of course but tweaked them a little.
Baked corn flake chicken fingers:
- 2 big boneless skinless chicken breast ( I cut them through the middle and then into strips, they were THAT huge it made 12 chicken strips)
- corn flakes
- yellow mustard
- honey or agave nectar (that's what I used since I already had it in my pantry)
- 1 egg
Combine the egg, mustard and agave (just eyeball the amount you really cant go wrong here)
dredge the chicken strips in this mixture and then coat in crunched up corn flakes. Place on baking sheet. Bake at 425 for about 15 minutes.
Roasted Parmesan green beans:
- 1 bag of fresh green beans (you can use frozen too)
- fresh grated parm cheese (you can probably use the Kraft parm but I felt like going all out and paid the 8 million dollars for fresh grated whomp whomp)
- olive oil
- salt and pepper
Toss green beans in good amount of olive oil, s&p and parm cheese then bake at 425 for about 20 minutes.
It was soooo good and really not that bad for ya! I made a little homemade honey mustard with some Dijon, yellow mustard and some of the agave nectar it was perfect nice and sweet. Good dipping sauce. So enjoy
