sweet potato boats

We tried something new last night for din din and it was YUMMY, I kinda mixed to recipes I found on pinterest together. On was for just a twice baked sweet potato with broccoli and the other was for a regular potato with with ground turkey and cheese. 
2 regular sweet potato's 
2 tablespoons Greek yogurt (I know I know that sounds gross but the regular recipe calls for sour cream and that's a good substitute)
1 cup of broccoli florets
1/2 cup reduced fat cheddar cheese
ground turkey
salt and pepper to taste

Note: add a little more salt than you normally would since the sweet potato's are so sweet)

microwave the sweet potato's for about 10 minutes until soft while doing that cook the ground turkey and steam the broccoli. Cut the potato's in half and scoop out the insides into a dish. Then mix sweet potato's, Greek yogurt, cheese, broccoli and turkey. Scoop back into the sweet potato boat sprinkle a little cheese on top then broil until cheese is melted and ENJOY!

These were seriously good and super easy and as you know that's my kinda dinner!!!

Next week is BIRTHDAY WEEK!! I'm super excited. This month is crazy with birthdays in my family. My sisters is the 4th my grandfather is the 22nd my dad is the 25th and I am the 28th PLUS at work we have 3 other March birthdays so its a very fun month! I'm excited to stuff my face with fatty mcfatterson cake and sweets!
